Phycocyanin is the main blue pigment of the micro-algae spirulina and is specifically part of the cyanobacteria family (spirulina is cyanobacteria). Like plants, cyanobacteria perform a process of photosynthesis that releases oxygen. Phycocyanin is part of the spirulina’s photosynthetic system. Through a process of isolation and extraction, the resulting Phycocyanin powder is a deep blue color with uses in foods, beverage and cosmetics providing a clean label, all-natural colorant claim.
